Spinach Ice Cream!



That's right, folks.  Break out your giant Costco-sized bag of spinach because you'll want to make this stuff every day of your life.  Grant couldn't get enough of it.  Aside from the pukish green color, you will love the taste of minty fresh ice cream, without all the fat and sugar.  As always, I don't have a recipe, I just threw stuff into the Vitamix until it looked thick and creamy.  I don't know if this will work with a normal blender- might be too spinachy and the ice may not get chopped enough.  Ask for a Vitamix for Christmas, just so you can make this...  Now you all know why Will is wasting away, down in the 170's now- these little "treats" have now become his ONLY treats!

"Mint Ice Cream" aka Spinach Ice Cream

Blend:
2 handfuls of ice
1-2 handfuls of raw spinach
1 frozen banana (not too ripe)
2 T of vanilla almond milk, chocolate milk or regular milk
1-2 T of mint or dark chocolate chips or 1 T choc syrup
2 drops of mint extract

* we topped ours with oreo cookie crumbs

Mint Spinach Smoothie (another variation I made this morning):

1 handful of ice
1/2 scoop chocolate protein powder (or vanilla protein plus a little unsweetened cocoa)
skim milk (a cup or so, just to the thickness you want)
1 handful of spinach
1/2 frozen banana
a little mint extract 
a few chocolate chips (optional and delicious)

  1. Tried it...liked it, though I spilled a little more mint flavoring in it and would definitely be more careful with that next time.
